Gluten Free Lemon Raspberry Cake

If you are looking for a fabulous gluten-free lemon cake recipe, look no further. This cake is infused with fresh lemon juice and raspberries and topped with a light lemon glaze. When you use fresh fruit in desserts, the cake becomes moist, and you can taste the fresh flavour of the fruit, which is why this dessert is so delicious.

 

 

Ingredients

  • 1 cup almond flour
  • 1 cup GF all purpose baking flour blend
  • 1 cup GF white rice flour
  • 2 tsp. GF baking powder (aluminum free)
  • ½ tsp. GF baking soda
  • ½ tsp. sea salt
  • ½ cup extra virgin olive oil
  • ½ cup agave nectar
  • 2 large eggs, at room temperature
  • 1 cup coconut milk, at room temperature
  • 12 oz. organic raspberries
  • ½ cup fresh lemon juice (about 4 lemons)
  • Glaze ~ ¼ cup agave nectar + 1/3 cup fresh lemon juice + 1/3 cup coconut milk+ 1 tsp. GF tapioca starch
  • Instructions

  • Preheat oven to 350 F
  • In a large bowl mix together, flour, baking powder, baking soda and salt
  • In a separate bowl mix olive oil, agave, egg yolks (keep whites separate), coconut milk and lemon juice. Whip up the egg whites and fold into egg mixture., Add to dry ingredients and gently mix until all ingredients are combined. Pour into a 10-inch springform cake pan and bake for 45 minutes or until a toothpick inserted in the middle comes out clean
  • For the glaze; add all the ingredients into a saucepan and whisk together. Cook over medium heat while stirring until the sauce thickens. Pour glaze over warm cake, then cool the cake completely before serving
