Gluten-Free Ham & Cheese Rolls

A perfect addition to a lunch box! Making lunches can become tiresome, this is why these savoury rolls make a great addition to your recipe box. I think what I love most about these gluten-free rolls aside the ham, and melted cheese and how delicious they are is that they make back to school lunches easy. No need to make sandwiches in the morning, add some fresh fruit and they are good to go. For after school, if you like, pop them in the oven at 400 F for 5 minutes, and they come out as if you just finished baking them. 

Ingredients

  • ½ cup GF potato starch (not potato flour)
  • ½ tsp. Pure sea salt
  • ¼ cup almond flour
  • 1/4 cup butter, plus some for brushing
  • 1 ¼ cup milk at room temperature
  • 1 Tbsp. pure maple syrup
  • 1 large egg, at room temperature
  • FILLING
  • 150 g (about 5 oz.) thinly sliced GF ham
  • 1 cup shredded cheddar cheese
  • 1/4 cup thinly sliced green onions
  • Instructions

  • DOUGH
  • Place all dry ingredients in a large bowl and mix until all ingredients are combined
  • Heat butter until just melted, whisk in milk, egg, and apple cider vinegar
  • Add wet mixture to dry ingredients and with a hand mixer mix for about 3 minutes scraping the sides down as needed. Cover and rest for 1 hour
  • After an hour, punch the dough down and place between two sheets of parchment paper. Roll it out into a rectangle about 8x14 inches, about ¼ “ thick
  • Remove the top sheet and layer with ham, cheese and green onions. Roll the dough using the parchment paper into a tightly formed roll. Slice the roll in cross-section into twelve equal pieces. Place each roll in a well-greased muffin pan. Cover with a dry cloth and place in a warm place for the dough to rise, about 1 hour. The rolls should double in size
  • Brush with melted butter and bake for 20 - 25 minutes at 350 F, until the rolls are golden. Do not over-bake or they will become dry
