Gluten Free Cornbread with Raisins

This delicious cornbread is moist and lightly sweetened with raisins. Serve as a snack with a slice of cheddar cheese or with chilli or curry dishes

 

Ingredients

  • ¾ cup GF corn grits or (medium grind cornmeal)
  • ¾ cup GF corn flour
  • ½ cup sweet white sorghum flour
  • ½ tsp. sea salt
  • 3 tsp. GF aluminum-free baking powder
  • 1 cup milk or non-dairy milk (coconut, almond or rice)
  • 2 large eggs, at room temperature
  • 1/3 cup fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • 1/3 cup agave nectar
  • 2 tsp. pure vanilla extract
  • 2 cups sulfite free raisins
  • Instructions

  • Preheat oven to 375 F
  • In a large bowl combine all dry ingredients
  • In separate bowl whisk together all wet ingredients
  • Add wet mixture to dry ingredients and stir until combined
  • Pour batter into non-stick or lightly greased bread loaf pan and top with raisins. Using a spatula slightly press the raisins into the batter
  • Bake for 40 minutes, or until toothpick inserted in the middle comes out clean
