Gluten Free Coffee Pecan Rum Balls

These delectable little treats that melt in your mouth are oozing with unforgettable flavours. They are grain free, dairy free, vegan, paleo and raw. Since pecans and black currants are a powerhouse of nutrition these yummy treats are also super healthy.

 

Ingredients

  • 1 cup raw pecans
  • 1 cup dried black currants (oil free and sugar free)
  • 2 Tbsp. ground GF flax seed
  • 1/3 cup crystalized ginger pieces
  • 2 Tbsp. instant coffee
  • 1 tsp. GF ground cinnamon
  • 2 Tbsp. pure unsweetened shredded coconut
  • 1 Tbsp. pure cocoa powder
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. pure maple syrup
  • 1 Tbsp. dark rum or if you do not want to use rum you can use 2 tsp. pure vanilla extract
  • ½ cup pure unsweetened shredded coconut for rolling the balls
  • Instructions

  • Place all ingredients in a food processor and blend until thick doughy mixture forms. (keep the ½ cup of shredded coconut for later)
  • With your hands make small balls and roll them in ½ cup of shredded coconut
  • Place in an airtight container and refrigerate for an hour before serving. These will keep up to two weeks when refrigerated
