Gluten Free Cashew Coconut Chocolate Bites

These tasty gluten free cashew coconut chocolate bites will give you lasting energy. Enjoy as a snack or for a quick pick me up before a workout

Ingredients

  • ¾ cup certified GF instant oats (I use Glutenfreeda)
  • 1 very ripe banana
  • 1 cup chopped raw cashews
  • 1 tsp. pure cocoa powder
  • ½ cup GF pure coconut flakes
  • ¼ cup GF semisweet chocolate chips
  • 1 Tbsp. strong dark coffee
  • Instructions

  • In a medium-size bowl mash the banana
  • Add balance of ingredients and mix well
  • Using a spoon drop small mounds of dough approximately the size of a plum on a baking sheet lined with parchment paper
  • Bake at 400 F for 15 minutes. Cool on the baking sheet
