Gluten Free Carrot, Apple and Walnut Muffins

These delicious gluten free carrot, apple, and walnut muffins are made without added fat or sugar. The healthy muffins are also dairy-free and low fat. Starting your day with a muffin packed with fresh fruit and nuts will provide you with lasting energy

 

Ingredients

  • 1 large very ripe banana, mashed with a fork (the riper the banana the sweeter the muffins)
  • 1 medium carrot, grated
  • 2 medium apples, cored, peeled and roughly chopped
  • 1 Tbsp. minced ginger
  • 1 tsp. pure vanilla extract
  • 1 cup chopped raw walnuts or pecans
  • 1 ½ cup orange juice
  • 2 eggs, whisked
  • 3/4 cup coconut flour
  • 1 Tbsp. GF ground flax seed
  • 1 tsp. GF ground cinnamon
  • 2 tsp. GF aluminum free baking powder
  • Instructions

  • Preheat oven to 375 F
  • In a large bowl combine banana, carrots, ginger, and vanilla. Add walnuts, orange juice and eggs and mix
  • Mix dry ingredients and add to the bowl. Gently stir everything together
  • Pour batter into muffin pan lined with parchment paper cups. Top with apples and using a spoon lighty press the apples into the batter
  • Bake at 375 F for 25 - 30 minutes or until the tops are golden and a toothpick inserted in the middle of the muffin comes out clean
