Gluten And Dairy-Free Cauliflower Alfredo Sauce

Learn how to make gluten-free Alfredo sauce that is so creamy, you’ll never know it is dairy free. This nourishing, delicious cauliflower Alfredo sauce is wonderful with pasta, in scalloped potatoes or over steamed veggies. The part I love, it is quick and simple to make. Enjoy!

Ingredients

  • 2 Tbsp. Coconut oil
  • 1 large onion, sliced
  • 3 Garlic cloves, chopped
  • 1 medium cauliflower, broken into small florets
  • 1 cup dairy-free milk (coconut, almond, rice)
  • 3/4 - 1 cup GF chicken stock, for vegan option use GF vegetable stock
  • 2 Tbsp. Nutritional yeast
  • Salt and pepper to taste
  • Instructions

  • In a medium-size saucepan, heat coconut oil over medium heat. Add onions and garlic and stir. Cover and reduce heat to medium-low. Cook for 10 - 15 minutes or until the onions are golden colour, stirring frequently
  • While the onions are cooking steam cauliflower until tender
  • Add everything into a high-speed blender, starting with only 3/4 cup of stock and blend until smooth. See how thick the sauce is, if needed add little more stock. Enjoy!
