Summer dessert, is there anything more refreshing during hot summer months than Frappuccino Ice Cream Bar? There is something about a creamy, coffee and chocolate flavoured ice cream. The heavenly bar is made with coconut milk, coffee, cocoa, vanilla and pure maple syrup. Making ice cream bars at home allows you to control the ingredients, especially the sweetener, keeping the ice cream healthier. The best part, this recipe is super easy, just whisk everything together and freeze.

This delicious vegan ice cream bar will keep you cool and satisfy your sweet tooth craving every time. When the weather gets hot, I keep a batch of these creamy ice cream bars in my freezer, this way I have a delicious dessert on hand all the time.   • 1/4 cup hot espresso or strong coffee
  • 1 Tbsp. Pure cocoa powder
  • 1 tsp. Pure vanilla extract
  • 2 cups full fat coconut milk
  • 1/3 cup pure maple syrup or to taste
  • Instructions

  • Whisk together coffee with cocoa powder and vanilla
  • Add coconut milk and maple syrup and whisk until combined
  • Evenly divided between 6 - 8 popsicle moulds. Depends on the size of your popsicle mould. Freeze overnight
