Cuban Vegetarian Garbanzo Bean Soup

After a busy day, this Cuban Vegetarian Garbanzo Bean Soup is the way to go. This gluten free recipe is simple to make, and the soup is hearty enough for a main. The delicious flavours in this tasty soup come slowly simmered vegetables and from Cuban spices. Serve with gluten free cornbread

 

Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 1 white onion, chopped
  • 3 garlic cloves, chopped
  • 1 tsp. GF caraway seeds + 1 Tbsp. GF dried marjoram + 1 Tbsp. GF dried mustard powder + 1 Tbsp. GF chilli powder + 2 GF bay leaves
  • 1 red bell pepper, cut to small bite size
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 x (13.5 oz) canned garbanzo beans, drain and rinse
  • 1 cup pure tomato sauce
  • 4 cups GF vegetable broth
  • Sea salt to taste
  • Chopped fresh parsley for garnish
  • Instructions

  • Using a large soup pot saute onions in olive oil over low heat until soft. About 5 minutes
  • Add garlic, caraway, marjoram, mustard powder, chilli powder and bay leaves, and stir to combine
  • Add remaining ingredients, cover and simmer for 40 minutes
  • Serve with chopped parsley
