Cucumber salad is refreshing and hydrating. In this sumptuous salad, the cucumber is flavoured with a light sour cream dressing that is infused with garlic and basil. As per Dr. Mercola, cucumber is a low-calorie vegetable packed with antioxidants may help with inflammation and is an excellent source of vitamin K. Ingredients

  • 1 large English cucumber (about 1 pound) peeled and sliced
  • ½ cup reduced fat sour cream
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp. agave nectar
  • 3 garlic cloves, minced
  • ¼ cup chopped fresh basil
  • Sea salt and GF coarse black pepper to taste
  • Note: the thickness of cucumber slices depends on what you prefer. I don't slice mine too thin, leaving the cucumber deliciously crunchy
  • Instructions

  • In a medium serving bowl, whisk together sour cream, lemon juice, olive oil, agave, garlic and basil
  • Add cucumbers and gently stir to coat. Season with salt and pepper
  • Serve immediately or refrigerate covered up to 6 hours
