Baked Apples With Blueberries and Pecans

Here is a healthy and scrumptious dessert made with apples blueberries and pecans. The apples are stuffed with lightly flavoured blueberries and pecans and then baked. A beautiful fall dessert recipe with health benefits



  • 4 medium apples, cored (preferably organic)
  • 1 cup fresh blueberries (preferably organic)
  • ½ cup roughly chopped pecans
  • 2 Tbsp. unsalted butter, melted (for vegan option use coconut oil)
  • 1 Tbsp. liquid honey (for vegan option use pure maple syrup)
  • ½ tsp. GF ground cinnamon
  • ½ tsp. lemon zest

  • Cut about ¼-inch of the apples on each end
  • In a small bowl combine blueberries, pecans, honey, butter, cinnamon and lemon zest
  • Place apples in a baking dish and stuff with the blueberry mixture. Pour remaining blueberry mixture over the apples. Cover with a lid or foil and bake for 1 hour
  • To serve place apples on a dessert plate and top with blueberry sauce from the baking dish
