Super Easy Chicken Curry On A Budget

This is quick and easy, delicious chicken curry recipe, just serve over basmati rice or quinoa

Serves 4

Ingredients

1 tbsp. coconut oil
1 organic sweet onion, finely chopped
2 garlic cloves, minced
2 tbsp. organic GF curry powder
2 tbsp. minced ginger
2 organic tomatoes, cut to small pieces
1 cup buttermilk or yogurt (for dairy free option use coconut milk)
1 cup organic GF chicken stock or water
1 organic red or yellow pepper, cut to bite size • 1 organic carrot, cut to bite size • 2 cups organic green cabbage, cut to bite size
4 organic skinless, boneless chicken breasts, cut to bite size
1 bunch organic fresh cilantro, chopped
1 tbsp. fresh lime juice
Sea salt to taste

Instructions

In a large saucepan add coconut oil and onions, sauté until soft, add garlic, curry, ginger and sauté until just fragrant
Add tomatoes and stir, add buttermilk and chicken stock, bring to simmer
Add pepper, carrot, cabbage and chicken
Simmer for 20 - 30 minutes or until chicken is fully cooked, add cilantro, lime juice and salt. Stir and serve
