Super Easy Chicken Curry On A Budget

This is quick and easy, delicious chicken curry recipe, just serve over basmati rice or quinoa

Serves 4


  • 1 tbsp. coconut oil
  • 1 organic sweet onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp. organic GF curry powder
  • 2 tbsp. minced ginger
  • 2 organic tomatoes, cut to small pieces
  • 1 cup buttermilk or yogurt (for dairy free option use coconut milk)
  • 1 cup organic GF chicken stock or water
  • 1 organic red or yellow pepper, cut to bite size • 1 organic carrot, cut to bite size • 2 cups organic green cabbage, cut to bite size
  • 4 organic skinless, boneless chicken breasts, cut to bite size
  • 1 bunch organic fresh cilantro, chopped
  • 1 tbsp. fresh lime juice
  • Sea salt to taste
  • Instructions

  • In a large saucepan add coconut oil and onions, sauté until soft, add garlic, curry, ginger and sauté until just fragrant
  • Add tomatoes and stir, add buttermilk and chicken stock, bring to simmer
  • Add pepper, carrot, cabbage and chicken
  • Simmer for 20 - 30 minutes or until chicken is fully cooked, add cilantro, lime juice and salt. Stir and serve
