This side compliments pork, turkey or chicken. I love serving it in baked acorn squash or just as is. The sweet taste of maple syrup with a hint of nutmeg gives this side a taste of winter.

  • 2 tbsp. extra virgin olive oil
  • 1 medium size yellow onion, sliced
  • ½ tsp. organic GF ground nutmeg
  • ½ medium size red cabbage, sliced
  • 2 medium size sweet potatoes, peel and cube
  • ½ cup water
  • 2 tbsp. organic GF apple cider
  • 1 tbsp. pure maple syrup
  • Sea salt and freshly ground organic GF black pepper to taste
  • Instructions

  • Heat olive oil in a large sauté pan and add onion, sauté until soft about 5 minutes
  • Stir in nutmeg, then cabbage and potatoes. Stir well and add water.
  • Turn heat to low simmer, cover and cook for 20 minutes or until sweet potatoes are fully cooked, stir couple of times in between while cooking.
  • Then add apple cider, maple syrup and season with salt and pepper.
