Stewed Cabbage with Sweet Potato

This side compliments pork, turkey or chicken. I love serving it in baked acorn squash or just as is. The sweet taste of maple syrup with a hint of nutmeg gives this side a taste of winter.


2 tbsp. extra virgin olive oil
1 medium size yellow onion, sliced
½ tsp. organic GF ground nutmeg
½ medium size red cabbage, sliced
2 medium size sweet potatoes, peel and cube
½ cup water
2 tbsp. organic GF apple cider
1 tbsp. pure maple syrup
Sea salt and freshly ground organic GF black pepper to taste


Heat olive oil in a large sauté pan and add onion, sauté until soft about 5 minutes
Stir in nutmeg, then cabbage and potatoes. Stir well and add water.
Turn heat to low simmer, cover and cook for 20 minutes or until sweet potatoes are fully cooked, stir couple of times in between while cooking.
Then add apple cider, maple syrup and season with salt and pepper.
