Spicy Szechuan Beans Recipe

This tasty vegan dish is a combination of green and black beans lightly spiced with garlic and ginger. The simple bean recipe is packed with a lot of flavours and takes only minutes to prepare. It is also naturally gluten free. Serve as a main over quinoa or rice, or as a side to chicken or pork

Ingredients

  • 1 lb. green beans, trimmed
  • 1 (14 oz.) can of organic black beans, drain and rinse
  • 2 Tbsp. coconut oil or extra virgin olive oil
  • ½ tsp. sesame oil
  • 4 garlic cloves, thinly sliced
  • 2 Tbsp. minced ginger
  • 1 Tbsp. Gf apple cider vinegar
  • 2 Tbsp. GF tamari sauce
  • 2 Tbsp. pure maple syrup
  • 1 – 2 tsp. gluten-free organic hot chili flakes or to taste
  • Instructions

  • Cook green beans in salted water for 3 – 5 minutes or until crispy tender. Drain
  • Using a large non-stick pan heat olive oil over low heat. Add garlic and ginger and cook for 1 minute
  • Increase heat to medium and add the balance of ingredients. Stir-fry to combine and cook until sauce thickens, about 2 – 3 minutes
  • Serve hot
