Quinoa Pilaf

Quinoa is superfood that should be included in everyone’s diet. Here are some important health benefits ~ It is high in protein, good source of riboflavin, alkaline forming and it is a complex carbohydrate with low glycemic index, and because quinoa is not a grain but a seed it is also gluten free. In this recipe I have added fresh parsley and sweet grapes both of which compliment each other, thus creating a delicious pilaf.  If you are not a fan of quinoa you must try this recipe and you may change your mind. You can serve it cold, warm or hot. Enjoy!

Serves 4



2 cups cooked organic red and white quinoa blend (cook as per package instructions)
1 cup chopped organic parsley
2 cups organic grapes, cut in half
¼ cup organic apple cider vinegar
1 tbsp. extra virgin olive oil
1 organic garlic clove, minced
½ tsp. organic GF ground cumin
Sea salt and organic GF freshly ground black pepper to taste


Add quinoa, parsley and grapes into a bowl
In a separate bowl whisk together balance of ingredients, then add to quinoa and combine well
Let the quinoa marinate for 2 hours, stir just before serving.
