Poached Wild Salmon

This is an easy way to cook salmon to perfection every time. The tender salmon is juicy and deliciously flavoured with herbs and lemon. This healthy meal will be loved by your diet savvy friends and family. Serve over brown rice or a light green salad.



Wild salmon filet with skin, approximately 1 1/2 pounds, rinsed in cold water
1/3 cup organic chives or green onions, thinly sliced
1 tbsp. fresh dill, torn into small pieces
½ cup chopped fresh organic parsley
Juice of 1 organic lemon
2 tbsp. extra virgin olive oil
Sea salt and organic GF Coarse ground black pepper, to taste
½ cup sliced black Greek olives (optional)
1 organic lemon, thinly sliced


Preheat oven to 400 F
Line your baking tray with parchment paper large enough to form a tent over the salmon, place the salmon skin down on the baking tray
Combine, chives, dill, parsley, lemon juice, olive oil, salt and pepper and pour evenly over the salmon. Top with olives and lemon slices
Use the sides of the parchment paper to form a tent and close at the top
Bake at 400 F for 15 minutes, if your salmon filet is larger bake for 5 minutes longer. To serve, remove lemon slices and slide the salmon on your platter, and drizzle with the juices
