Pasta With Turkey And Fresh Spinach

This is a very tasty light Italian dish that uses lean turkey and fresh spinach combined with traditional Italian herbs and spices.

Serves 4 large bowls

Ingredients

  • 2 tbsp. extra virgin olive oil
  • 1 ½ lb. ground lean turkey
  • 3 garlic cloves, minced
  • 1 tbsp. organic GF dried basil
  • 1 tsp. organic GF dried oregano
  • 1 tsp. organic GF paprika
  • 1 bunch organic fresh curly parsley, chopped
  • 4 large organic ripe tomatoes, chopped
  • ½ tsp. sea salt or to taste
  • 1 cup water
  • Organic GF hot chili pepper flakes to taste (optional if you like spicy)
  • 12 oz. fresh organic baby spinach
  • 16 oz. gluten free brown rice spaghetti, cook as per package instructions
  • Instructions

  • Heat oil in large saucepan and sauté turkey until golden
  • Add garlic, basil, oregano, paprika, parsley, tomatoes, salt and continue cooking for 5 more minutes while stirring. Add water and simmer for 10 more minutes.
  • Add spinach in another sauce pan with a splash of olive oil and cook until it wilts (do not over cook).
  • Place pasta in a large serving bowl, add meat mix and spinach and gently toss until all ingredients are well combined. Serve with freshly grated Parmesan cheese.
