Low-Fat Indian Butter Chicken

Indian food is well known for the many spices used in their recipes. However, the focus should be matching the right spices with the type of food you are making to enhance the dining experience. This is an easy low-fat butter chicken recipe that is also gluten free. Serve with one of our delicious rice dishes or a light salad.






For the marinade • 2 cups plain full fat yogurt (Greek is a good option) • 6 garlic cloves, minced • 1 tbsp. freshly minced ginger • 1 tbsp. garam masala • 1 tbsp. freshly squeezed lime juice • 1 tbsp. curry powder • 2 tsp. sweet paprika • 2 tsp. ground cumin • 2 tsp. ground coriander • 1 tsp. sea salt
6 boneless skinless chicken breasts, cut to large bite size pieces
1 tbsp. coconut oil
1 sweet onion, finely chopped
1 tbsp. garam masala
2 tsp. paprika
2 tsp. curry powder
1 (13.5 oz.) can of crushed tomatoes (no additives)
1 (13.5 oz.) can full fat coconut milk
2 tbsp. freshly squeezed lime juice
Pinch of cayenne (optional if you like spicy)
1 cup freshly chopped cilantro
NOTE: All ingredients including spices must be gluten-free and preferably organic


To marinate the chicken ~ combine all marinade ingredients, add chicken and coat well, refrigerate for 24 hours, turning couple of times
Add coconut oil and onions into a large pot, sauté onions until soft, stir in garam masala, paprika and curry powder and cook on low heat until fragrant (about 1 minute)
Add in tomatoes, coconut milk, lime juice and chicken with marinade, cover and cook on low heat for 30 minutes or until the chicken is tender
Stir in cilantro and serve with one of our delicious rice recipes
