Light And Super Healthy Kale Salad ~ Naturally Gluten-Free

Kale is one of those vegetables that is rich in antioxidants and healthy nutrients. This simple salad is infused with light dressing and smothered with fresh parmesan cheese. Sometimes the simplest things in life are the best things for us. Serve as a main or as a side with chicken, fish or beef






16 oz. pre-washed organic baby kale or 1 large regular organic kale
1 cup organic cherry tomatoes, halved
2 organic spring onions, minced
1 organic cucumber, thinly sliced and or 1/2 cup thinly sliced organic radishes
Pinch of fresh organic herbs like dill, basil and cilantro. Add as much or as little as you like.
1/2 cup organic sweet peas and or freshly grated 2 organic carrots
1/2 cup extra virgin olive oil
3 garlic cloves, minced
1/4 cup GF organic apple cider
Sea salt and freshly ground GF black pepper to taste
½ cup freshly grated Parmesan cheese plus some for topping (optional)


Remove stems from kale and thinly slice. Place in a large bowl with balance of vegetables and herbs
For the dressing ~ mix olive oil, apple cider, garlic, parmesan cheese (optional) sea salt and pepper to taste
Add dressing to the salad and toss 10 minutes before serving.
You can add freshly grated parmesan cheese on top of the salad. (optional)
