Layered Chia Pudding with Maple Glazed Walnuts

When it comes to chia pudding, it is so versatile. In this chia pudding, I used grapefruit, yogurt, grapes and honeydew melon keeping the pudding cool and refreshing. The maple glazed walnuts add a nice crunchy texture to the lightly sweetened pudding. If you feel creative choose your layers and toppings, it is so much fun. Kids especially love to create their pudding by adding bananas, raisins, chocolate chips, peanut butter or ice cream


2 cups cashew, almond or coconut milk
5 Tbsp. GF chia seeds
2 Tbsp. agave nectar
1 tsp. maca powder (optional)
½ tsp. pure vanilla extract
1 cup walnuts
2 Tbsp. pure maple syrup
1 tsp. butter or coconut oil
LAYERS; 1 cup full fat Greek plain yogurt. 1 cup halved grapes, 1 cup sliced honeydew melon, 4 grapefruit segments
Fresh mint leaves for garnish (optional)


Combine milk, chia seeds, agave, maca powder and vanilla. Leave for 5 minutes, and then stir again. Chill overnight
Preheat a dry pan over medium-high heat. Add walnuts, maple syrup and butter. Cook, stirring until syrup is caramelized and nuts are toasted about 3 minutes. Set aside to cool
To serve; layer 4 serving glasses as follows: grapefruit, ½ chia pudding, ½ yogurt, ½ grapes, ½ honeydew, and ½ maple glazed walnuts. Repeat layers starting with chia pudding and garnish with fresh mint
