Hot Quinoa Cereal With Apples, Currants And Nuts

A simple and delicious alternative to traditional oatmeal. I call this a super breakfast that is loaded with protein, fiber and antioxidants. The quinoa is cooked with fruit and nuts in creamy coconut milk with a hint of cinnamon.


½ cup pre washed quinoa
½ cup dried black currants
¼ cup or your favourite nuts (if large chop to smaller pieces) I used pine nuts
1 organic apple, core and cut to small pieces
1 tsp. pure GF vanilla
1 tbsp. freshly squeezed organic lemon juice
1 tsp. grated lemon zest
1 ½ cup coconut or almond milk + ½ cup for topping
2 tbsp. pure maple syrup
pinch of sea salt


Preheat oven to 375 F
Add all ingredients into an 8-inch round casserole dish with lid and stir well
Cover with lid and bake for 40 minutes on the middle rack of your oven
To serve drizzle with coconut milk. This dish can also be served cold because it tastes just like pudding.
