Gluten-Free Savoury Yam and Cheese Scones

These country style savoury Yam scones have a sensational combination of flavours and textures. Scones are often served for brunch, especially with a selection of various toppings such as tomato, avocado, marmalade or cream cheese. They are mouthwatering when served warm

Ingredients

  • 1 cup steamed and mashed yam (1 small yam)
  • ½ cup Greek style plain yogurt
  • 2 tbsp. extra virgin olive oil
  • 1 cup brown rice flour
  • ½ cup all purpose gluten-free flour
  • 2 tsp. baking powder (preferably aluminum free)
  • ½ tsp. sea salt
  • ¼ tsp. dried rosemary
  • 2 green onions, sliced
  • 1 cup shredded old cheddar cheese
  • 2 strips of bacon, cooked and crumbled (optional)
  • Cracked black pepper
  • Instructions

  • Preheat oven to 425 F
  • Combine yam, yogurt and olive oil
  • In a large bowl sift together flours, baking powder, sea salt and rosemary, and then stir in green onions, cheddar cheese and bacon
  • Add yam mix to dry ingredients and mix with a spatula until the dough comes together
  • Transfer dough in between two pieces of parchment paper and roll into 1½-inch thickness. Cut the dough into squares or triangles
  • Transfer the dough to a baking sheet lined with parchment paper and sprinkle with cracked black pepper. Bake for 20 - 25 minutes or until golden
