Gluten Free Drumsticks in Peking Sauce

You will love this simple gluten free chicken recipe! All you need is one pan to make these amazing sticky and sweet drumsticks. Serve with a cabbage salad or over rice. Another wonderful option is, to make this recipe into an appetizer by substituting chicken wings for drumsticks. Reduce baking time by about 5 – 10 minutes for appetizer wings. These delicious wings are a winner at large gatherings or super bowl parties every time!

Ingredients

  • ¼ cup liquid honey
  • 3 Tbsp. GF ketchup
  • 2 Tbsp. GF Tamari sauce
  • 1 Tbsp. apple cider vinegar
  • 2 garlic cloves, minced
  • 2 tsp. minced ginger
  • 1 tsp. sesame oil
  • ½ tsp. GF ground cinnamon
  • ½ tsp. GF ground coriander
  • ½ tsp. GF ground black pepper
  • ½ tsp. sea salt
  • ¼ tsp. GF ground cloves
  • 8 chicken drumsticks, skin on
  • ½ cup thinly sliced green onions
  • 1 Tbsp. white or black sesame seeds (optional)
  • Note: To simplify this recipe you can substitute GF Chinese five-spice powder for the spices (cinnamon, cloves, coriander and black pepper)
  • Instructions

  • Preheat oven to 400 F
  • Whisk honey, ketchup, tamari sauce, apple cider vinegar, garlic, ginger, sesame oil and spices in a baking dish that is large enough to hold the chicken drumsticks without touching
  • Add chicken and coat well with the sauce. Cover with foil and bake for 30 minutes
  • Remove foil, turn the chicken pieces over and bake for 20 - 25 more minutes, or until the chicken is thoroughly cooked and has a sticky lightly charred coating
  • To serve, place chicken on a serving platter and spoon remaining sauce over the top. Sprinkle with green onions and sesame seeds
  • Note: For easy cleanup line the baking pan with parchment paper
