Gluten Free Chewy Maple Coconut Chocolate Cookies

Looking for a sweet snack without added fats? It doesn’t get any easier than this. This gluten free maple coconut chocolate cookie recipe takes only 5 minutes to prepare. Just mix and bake, and 20 minutes later you will have a healthier version of cookies. This simple cookie recipe is gluten free and paleo

 

 

Ingredients

  • 2 cups shredded coconut (unsweetened)
  • 1 cup GF semi-sweet chocolate chips
  • ½ cup coconut flour
  • ½ cup pure maple syrup
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • Instructions

  • Preheat oven to 350 F
  • Combine coconut, chocolate and coconut flour
  • Whisk maple syrup, eggs and vanilla. Add to dry ingredients and mix
  • Drop batter with an ice cream scoop or large spoon onto a baking sheet lined with parchment paper
  • Bake for 20 minutes. Cool on the baking sheet
