Gluten Free Blueberry And Walnut Muffins

These heavenly muffins are loaded with organic blueberries, walnuts, hemp seeds and flax seeds, they are also dairy free, egg free and gluten free.

Makes 12 muffins

 

 

Ingredients

1 cup gluten free all purpose flour
½ cup gluten free brown rice flour
¼ cup hemp hearts
¼ tsp. sea salt
2 tsp. aluminum free baking powder
1 tsp. gluten free organic ground cinnamon
2 tbsp. freshly ground flax seed + 6 tbsp. water (mix and place in the refrigerator for 30 minutes)
¼ cup melted coconut oil
½ cup pure maple syrup
½ cup dairy free milk such as coconut, almond, rice or hemp milk (room temperature)
3 cups organic blueberries
1 ½ cup roughly chopped raw walnuts
¼ cup coconut sugar for topping (optional)

Instructions

Preheat oven to 375 F
In a bowl combine flour, hemp hearts, sea salt, baking powder, cinnamon and walnuts.
In another bowl mix coconut oil, maple syrup, milk and flax mix, then add to dry ingredients and stir couple of times, then add blueberries and gently combine all the ingredients
Spoon out into muffin pan lined with parchment paper cups
Bake for 30 minutes at 375 F, cool before serving
