Gluten-Free Banana Chocolate Bread

If you love banana bread you will love this version. No added bad fats or processed sugars. Simple healthy ingredients and rich delicious taste.
Serves 8 slices family style
1 ¾ cup blanched GF almond flour
¼ cup all purpose GF flour
1 tbsp. organic GF cinnamon
¼ tsp. sea salt
1 tsp. GF baking soda
1 cup GF chocolate chips
3 ripe bananas, mashed with a fork
2 organic carrots, grated
½ cup pure maple syrup
2 eggs room temperature, whisked (for egg-free version you can use egg substitute just as good
½ cup warm coconut oil (little warmer then room temperature)
Preheat oven to 350 F and line a 6 by 8 inch baking pan with parchment paper
In a large bowl mix all the dry ingredients almond flour, all purpose flour, cinnamon salt, baking soda and chocolate chips
In another medium bowl mix bananas, carrots, maple syrup, eggs or (egg sub) and coconut oil
Add wet ingredients to dry and combine until all dry ingredients are well covered
Pour into the baking pan and bake for 45 minutes. Cool completely before serving.
