Easy Beef Curry With Sweet Potatoes

This scruptious beef curry with sweet potatoes is simple to make. The ethnic spices add plenty of flavour to this hearty chowder making this a casual one pot dinner. Serve with rice or gluten-free bread

 

Ingredients

  • 2 Tbsp. extra virgin olive oil or coconut oil
  • 1 medium sweet onion, chopped
  • 2 Tbsp. GF curry powder
  • 1 1/2 lb. lean ground beef
  • 2 garlic cloves, chopped + 1 tbsp. fresh minced ginger
  • 1 sweet potato, peel and cut to bite size
  • 1 tomato, roughly chopped
  • 1 red bell pepper, cut into bite size
  • 2 cups frozen mixed vegetables
  • 3 cups water
  • 2 Tbsp. fresh lime juice or apple cider vinegar
  • Sea salt to taste
  • 1 bunch fresh cilantro, chopped
  • Instructions

  • Heat olive oil over medium heat in a medium-size pot. Add onions and while stirring cook until soft, about 5 minutes
  • Add curry powder and stir, then beef, garlic and ginger. Cook beef until slightly browned
  • Add remaining ingredients except cilantro
  • Cover and cook over low heat for 45 minutes. Stir occasionally
  • Stir in cilantro and serve hot
