Detox Soup with Nori

Lacking energy can be a result of overeating, indulging in alcohol, consuming refined sugars or dealing with stress. Reset your body with this healing cleansing soup which is rich in healthy nutrients and low in calories

Ingredients

1 Tbsp. extra virgin olive oil
1 Tbsp. dried basil
1 Tbsp. turmeric powder
½ tsp. cayenne pepper
1 yellow onion, thinly sliced
2 garlic cloves, chopped
½ red bell pepper, thinly sliced
4 cups thinly sliced green cabbage
¼ lb. sliced mushrooms
4 cups of gluten-free vegetable or chicken broth + 1 cup water
2 Tbsp. minced ginger (about 2-inches)
Juice of one lime
2 sheets of nori (roasted seaweed). Using scissors cut into 2- inch strips
Note: all ingredients should be organic

Instructions

Heat oil over medium/low heat in a large soup pot. Add basil, turmeric, cayenne pepper, onion and garlic and cook for 1 minute while stirring
Stir in bell pepper, cabbage and mushrooms and cook for one more minute
Add the stock, water and ginger and bring to boil, add the lime juice and nori and remove from the heat. Cover and rest for 5 minutes, enjoy!
