Dairy Free Cream Of Tomato Soup

Kids love this creamy delicious cream of tomato soup, it is dairy free and super easy to make. To serve sprinkle with chives and drizzle with coconut milk and serve with gluten free crackers


2 tbsp. coconut oil
1 medium organic yellow onion, finely chopped
1 medium organic carrot, finely chopped
2 cloves garlic, finely chopped
3 tbsp. organic pure tomato paste
3 cups vegetable stock
1 tbsp. pure maple syrup
1 tbsp. fresh organic lemon juice
2 sprigs of thyme + 1 organic GF bay leaf
1 (15-oz.) can organic pure crushed tomatoes no additives
1 (13.5 oz.) can organic coconut milk
1 organic GF bay leaf


In a large pot add coconut oil, onion, garlic and carrot, sauté on medium heat until just soft, about 5 minutes
Add tomato paste and cook for about 2 minutes while stirring
Add stock, maple syrup, lemon juice, thyme, bay leaf and tomatoes, simmer for about 20 minutes, stirring occasionally
Remove from the heat, remove bay leaf and thyme, and add to food processor or blender., Blend until smooth
Return the soup to the pot and re-heat. Stir in coconut milk, and add sea salt to taste. Enjoy!
