Coconut and Leek Quinoa

The inherent creaminess of coconut milk and the mild onion-like leek works wonders for flavour in this delicious gluten free quinoa dish. Quinoa is a complete protein, has a good amount of fiber and is rich in folate and minerals. Including this superfood in your diet will promote good health. Serve with steamed veggies, in salads or with your favourite main.

1 Tbsp. coconut oil
1 mediums size leek, white part only thinly sliced
1 tsp. ground coriander
¾ cup white quinoa
¼ tsp. Himalayan pink salt
1 ¼ cup plain unsweetened coconut milk (not canned)


Heat coconut oil over medium heat, add leeks and sauté for 5 minutes
Stir in coriander, quinoa, and salt and then add coconut milk. Bring to a boil, cover and reduce heat to low. Cook for 10 minutes
Remove from the heat and set aside for 15 minutes
Fluff with a fork just before serving
