  • 1. Heat coconut oil over medium heat, add leeks and sauté for 5 minutes
  • 2. Stir in coriander, quinoa, and salt and then add coconut milk. Bring to a boil, cover and reduce heat to low. Cook for 10 minutes
  • 3. Remove from the heat and set aside for 15 minutes
  • 4. Fluff with a fork just before serving
