Chicken and Dates Bacon Wraps

Anything with bacon is heavenly, especially, when you combine bacon with dates and chicken. The flavours smoldering in your mouth are from the sweetness of dates mixed with the saltiness of the bacon. This simple to make gluten free chicken appetizer or a snack is a keeper!

Ingredients

  • 3 medium size boneless skinless chicken breasts, cut into approximately 1-inch pieces
  • 2 Tbsp. GF tamari sauce
  • 2 Tbsp. pure maple syrup plus 1 - 2 Tbsp. for brushing
  • 1 tsp. GF cracked black pepper
  • 1 Tbsp. fresh minced ginger
  • 12 pitted dates, halved lengthwise
  • 8 gluten free bacon strips, cut into thirds
  • Appetizer toothpicks
  • Instructions

  • Preheat oven to 375 F
  • In a glass bowl, combine chicken, tamari sauce, 2 tablespoons of maple syrup, black pepper, and ginger
  • Wrap each piece of chicken and date with a piece of bacon. Secure with a toothpick and place on a baking pan lined with foil paper
  • Bake for 25 minutes. Then brush with remaining maple syrup and bake until bacon is nice and crisp. About 3 - 5 more minutes
  • Note: Make the recipe in advance and refrigerate uncovered. Bring to room temperature before cooking or allow for extra cooking time
