Chewy Maple Coconut Chocolate Cookies

Looking for a sweet snack without the fats? It doesn’t get any easier than this, a perfect snack at any time, great for kids or with your afternoon tea. Gluten free, dairy free and Paleo

Makes 12 large cookies

Ingredients

2 cups shredded coconut (unsweetened)
1 chopped organic GF dark chocolate bar or 1 cup organic GF chocolate chips
½ cup coconut flour
½ cup pure maple syrup
2 organic eggs
1 tsp. pure vanilla

Instructions

Preheat oven to 350 F
Combine coconut, chocolate and coconut flour
Whisk together maple syrup, eggs and vanilla and add to dry ingredients then mix all together
Drop with an ice cream scoop or spoon onto a baking sheet lined with parchment paper
Bake at 350 F for 20 minutes, cool on the baking sheet
