Chewy Maple Coconut Chocolate Cookies

Makes 12 large cookies


  • 2 cups shredded coconut (unsweetened)
  • 1 chopped organic GF dark chocolate bar or 1 cup organic GF chocolate chips
  • ½ cup coconut flour
  • ½ cup pure maple syrup
  • 2 organic eggs
  • 1 tsp. pure vanilla
  • Instructions

  • Preheat oven to 350 F
  • Combine coconut, chocolate and coconut flour
  • Whisk together maple syrup, eggs and vanilla and add to dry ingredients then mix all together
  • Drop with an ice cream scoop or spoon onto a baking sheet lined with parchment paper
  • Bake at 350 F for 20 minutes, cool on the baking sheet
