Carrot and Coriander Soup


This soup is more vibrant than other typical winter soups. This fragrant, aromatic carrot and coriander soup is hearty yet very low in fat and dairy free which means it is a real guilt free treat. The distinct flavour of coriander perfectly complements the carrots.


Serves 4


1 tbsp. coconut oil
1 organic sweet onion, chopped
4 organic carrots, cut to bite size pieces
1 garlic clove, chopped
1 tsp. organic GF ground coriander
4 cups GF vegetable stock
1 organic small sweet potato, peeled and cut to bite size pieces
¼ cup organic cilantro, chopped
1 tbsp. organic fresh lemon juice
Sea salt and freshly ground organic GF black pepper to taste


Add coconut oil, onions and carrots into a large pot, sauté for 5 minutes
Add garlic and coriander and stir couple of times
Add stock, and sweet potato, bring to boil and cook for 10 minutes or until vegetables are soft, then add cilantro, lemon juice and turn off the heat
Puree soup until smooth in a blender or food processor
Garnish with freshly chopped cilantro and drizzle with yogurt or coconut milk
