Cabbage, Fennel And Pear Crunch

HERE ARE SOME REASONS WHY WE SHOULD BE EATING THIS SUPER HEALTHY POWER SALAD

Cucumber hydrates the body and some studies have shown it reduces the risk of some cancers

Cabbage is high in vitamin C and vitamin K and helps keep blood pressure down and is also high in sulfur, which is also called the beautifying mineral

Fennel is rich in vitamin C, potassium, folate and calcium

Red onions contain a high amount of polyphenols, a type of phytonutrient, which includes disease-protecting flavonoids and tannis, they are one of the most polyphenol-packed food you can eat. Polyphenols are the most abundant antioxidants in the diet.

Pears contain a fair amount of vitamins C, K, B2, B3, and B6. Pears also contain minerals such as calcium, magnesium, potassium, copper, and manganese.

All of the above are also low in calories and high in fiber, oh did I mention this salad is super delicious… so eat up!

 

Serves 4

Ingredients

½ organic medium size green cabbage
1 organic fennel, cut both ends off same as onion
½ organic red onion
1 small organic field cucumber, I do not peel mine but if you prefer you can peel it partially
2 tbsp. organic fresh mint, chopped
1 tbsp. organic GF apple cider
2 tsp. extra virgin olive oil
Sea salt and organic GF freshly ground black pepper

Instructions

Thinly slice cabbage, fennel, onion and cucumber
Add on to a serving platter with mint, apple cider, olive oil, salt, pepper and toss
Add pears just before serving and toss once more
