Cabbage, Fennel And Pear Crunch Salad

This healthy cabbage salad is light and refreshing. The vegetables and fruit used in this crispy salad are known to have many health benefits. Cucumber hydrates the body and some studies have shown it reduces the risk of some cancers. Cabbage is high in vitamin C and vitamin K and helps keep blood pressure down and is also high in sulfur, which is also called the beautifying mineral. Fennel is rich in vitamin C, potassium, folate and calcium. Red onions contain a high amount of polyphenols, a type of phytonutrient, which includes disease-protecting flavonoids and tannis, they are one of the most polyphenol-packed food you can eat. Polyphenols are the most abundant antioxidants in the diet. Pears contain a fair amount of vitamins C, K, B2, B3, and B6. Pears also contain minerals such as calcium, magnesium, potassium, copper, and manganese. Did I mention this salad is super delicious… so eat up!

 

Serves 4

Ingredients

  • ½ medium size green cabbage
  • 1 large fennel bulb, remove ends on each side
  • ½ red onion
  • 1 small field cucumber, peel or not peel, your choice
  • 2 Tbsp. fresh chopped mint
  • 1 Tbsp. apple cider vinegar
  • 2 tsp. extra virgin olive oil
  • 1 tsp. agave nectar
  • 2 pears, peel and remove seeds, then thinly slice
  • Sea salt and GF freshly ground black pepper to taste
  • Instructions

  • Thinly slice cabbage, fennel, onion and cucumber
  • Add cabbage, fennel, onion, cucumber and mint into a large salad bowl
  • Mix apple cider vinegar, olive oil and agave. Add to salad and toss to combine
  • Add pear slices and season with salt and pepper and gently toss
