Cabbage Chop Salad – Easy Recipe

This tasty, crunchy salad is loaded with healthy nutrients, plenty of fiber and will provide our body with lasting energy. There is nothing complicated about this chop salad. Just chop and toss in a simple dressing

Ingredients

  • 4 cups roughly chopped green cabbage
  • 2 stalks of celery, diced
  • 1/2 cup diced radishes
  • ½ red onion, thinly sliced
  • 1 organic large apple, peeled, cored and cubed
  • 2 cups cooked corn kernels, cooled
  • 1 cup chopped organic cilantro
  • ¼ cup fresh lime juice
  • 2 Tbsp. extra virgin olive oil
  • 2 tsp. agave nectar
  • Sea salt and freshly ground GF black pepper to taste
  • 2 cooked slices of gluten-free bacon, roughly chopped or 1/4 cup raw gluten-free pumpkin seeds
  • Instructions

  • Add cabbage, celery, radishes, onion, apple, corn and cilantro into a large bowl.
  • Whisk together lime juice, maple syrup and olive oil and add to the salad. Toss well and season with salt and pepper to taste.
  • Top with bacon or pumpkin seeds
