Butternut Squash and Apple Meatloaf

This is a healthy way of serving meatloaf. The apples and butternut squash add tasty flavour without the extra fat making this a moist gluten-free meatloaf

 

Ingredients

  • 1 1/2 pound lean organic ground beef
  • 2 organic apples, peeled, cored and chopped
  • 1 lb. organic butternut squash, peeled, seeded and cut to small pieces or finely chopped
  • 2 garlic cloves, minced
  • 1 cup organic parsley, chopped
  • 4 oz. good quality goat cheese
  • 1 tsp. sea salt
  • 1 tbsp. pure maple syrup
  • 1 tbsp. organic GF apple cider
  • Instructions

  • Preheat oven to 350 F
  • In a large bowl mix all the ingredients together except maple syrup
  • Form a loaf and place in a baking dish, brush entire meatloaf with maple syrup
  • Bake for 1 hour covered with foil. Remove the foil off and increase the temperature to 380 F and bake another 30 minutes or until well browned
  • Remove the meatloaf out of the oven and cover with the foil. Rest for 20 minutes before slicing. Serve with gluten-free gravy
