Who doesn’t love a good meatloaf? Traditional meatloaf is on the list of family favourites, it is easy to prepare and budget friendly.
This recipe incorporates some classic meatloaf ingredients without the egg and breadcrumbs. I have added a little maple syrup for sweetness and stuffed it with zucchini. The zucchini is perfectly cooked with a little crunch and the bacon nicely finishes the maple crust. This recipe is truly a winner!
I wanted to use less meat then I would in a traditional meatloaf, so I stuffed it with zucchini, which is perfectly cooked with a bit of crunch. For those of you who are watching your weight I have used lean chicken and pork instead of traditional beef.
To finish it off I used maple syrup glaze and topped it with bacon, which created a perfect maple crust.
This recipe is egg and grain free making, paleo and a gluten-free favourite. Just serve it up with yam mash, steamed veggies or a light salad.
