Salads make an ideal and refreshing summer meal, as well as making a perfect gluten-free addition to barbeques, picnics and buffets. With more locally grown produce available during this time of the year at an affordable price, it’s easy to make delicious salads the whole family will enjoy.

This summer salad is easy to make, as doesn’t require much in the way of dressing or ingredients. Simply chop up:
·2 heirloom tomatoes, sliced
·1 medium sweet onion
·1 cucumber, cut lengthwise with the seeds removed
·½ cup parsley
·1 avocado, cubed
Once that’s done, place them in a large bowl.
Then, in another bowl, combine:
·Juice of two limes
·2 tbsp. extra virgin olive oil
·2 tsp. agave nectar
·1 tsp. dried basil leaves
·½ tsp. ground ·Sea salt and pepper
When you’re done, pour the dressing over the vegetables, gently toss and then stir, serve, enjoy!
This zesty salmon summer salad is super filing, meaning it can make a great meal on its own, and is packed with omega-3s and plenty of protein to keep full throughout your day.
In one bowl, combine:
·2 x (6 oz.) cans of wild salmon
·½ red onion, chopped
·½ cup cilantro, chopped
·1 stalk celery
·1 tbsp. extra virgin olive oil
·1 tbsp. GF mustard
·A pinch of sea salt and black pepper
Once that’s done, put 1 cup of your favourite greens and some avocado on your plate, and top with some of the salmon mixture. The recipe serves four or, alternatively, can be stored in the fridge to last you all week long.
